Happy Thanksgiving from Our Farm to Your Table 🦃 ❤️

Dear Farm Community -

The week has arrived….. Thanksgiving is here! Gratitude, loved ones, and FOOD… all things we at the farm can really get behind. In this season of appreciation, please accept our heartfelt thanks for supporting the farm and the work we do. Our mission is to bring good, wholesome, healing food to as many people as possible, while caring for the land and our farmers, and having a little fun along the way (obv). None of this would be possible without a community cheering us on near and far. Whether you’re rooting for us from down the street in Athens or across the globe, we are grateful. It is a gift to do this work, and we feel that gift every day.

We hope we’ll have a place at your Thanksgiving feast this year because you KNOW good food starts with good ingredients! Be sure to stop by the Athens Farmers Market HARVEST MARKET the day before Thanksgiving to pick up your turkey-day veggies.

While there are no CSA shares this week (bravo to a great year!) we’d love to offer a little inspiration so you can show up to the table with a feather in your cap and a dish to pass. Visit local chef Julia’s recipe website, Everyday Alchemy, for some gems! Pick up sweet potatoes from our booth and whip up sweet potato blondies with pecan pie glaze (my word…. and imagine them purple!), a root vegetable gratin, or snag some kale and contribute a kale and parmesan salad to the spread.

If you want to recreate the dish that took top prize at last year’s CSA potluck (just kidding, there were no prizes and we truly loved everything equally ), grab some sugarloaf endive from our market stand and prepare to have your mind blown. I used to be a full-on bitter-greens skeptic, but one bite of this dish converted me on the spot. Farmer Alex brought it to the potluck, armed with a recipe unearthed from some mysterious, enchanted corner of culinary TikTok, and it was divine ~ balanced, bright, savory, bitter, sweet, cheesy, salty, ooh la la. Borderline magical. If you’re looking for a conversation-starter that also earns you bragging rights, this is the dish to show up with.

Best Ever Baked Endive
Prep: 15 min
Cook Time: 45 min

Ingredients:
1 large head sugarloaf endive
8 anchovy filets in oil
1 tbsp pine nuts
2 tbsp olives
2 tbsp diced dried apricots or whole raisins
1 tbsp capers
1 cup breadcrumbs
1 cup grated pecorino or parmesan
1/4 cup parsley
olive oil as needed

Directions:
1. Preheat oven to 350F and line a baking sheet with foil
2. In a pan, sautee/combine olive oil, anchovies, pine nuts, olives, dried fruit, and capers. Stir until the anchovy filets dissolve.
3. Prepare the endive to be stuffed. Wash and separate the layers without breaking them off from the center.
4. Between the leaves, spoon the anchovy mix, a sprinkle of breadcrumbs, cheese, and a drizzle of olive oil. Repeat until all layers have been coated.
5. Sprinkle the remaining cheese and breadcrumbs on top.
6. Option to string the endive tightly together.
7. Bake for 45 minutes at 350F
8. The endive is finished when the center can be easily forked and the top is golden brown.
9. Impress your whole family ;)
